In Mexico they eat the flowers and tender stems that come, mainly, from Cucurbita argyrosperma (pumpkin pipiana), Cucurbita moschata (pumpkin from Castilla), Cucurbita ficifolia (chilacayote) and Cucurbita pepo (calabacita).

The characteristics of the pumpkins and their adaptation to the crop make that practically at any time of the year there are flowers and stems in the markets of central Mexico.
